Description

Pork chops can get pretty dried out. This recipe fixes that age-old problem. It's also a great main course for a family-style dinner. Just slice the pork after it's done cooking, place in a serving dish, and then top with the savory mustard sauce. These pork chops make wonderful leftovers and serve as a nice addition to a breakfast or atop a salad for lunch. Perfect Pork Chops also depend on getting the right pork. Pasture-raised pork will contain a healthier mix of fats and vitamin D. Pork also contains high concentrations of thiamine, which is used by all cells to make energy and is particularly important to the brain, and B6, which helps make several key neurotransmitters.

Ingredients

4 pork chops
Salt and freshly ground black pepper
N/A freshly ground black pepper
3 tablespoons olive oil
2 shallots, diced
2 tablespoons butter
2 cups white cooking wine
3 tablespoons Dijon mustard
1 tablespoon blackstrap molasses, maple syrup, or honey

Directions

  1. MAKE IT: Season both sides of the pork chops with salt and pepper to taste and drizzle with the olive oil. Set the chops, covered, on the counter for 1 hour before preparing the dish to bring them to room temperature. In a large skillet over medium heat, cook the shallots in butter until translucent. Add the wine, mustard, and molasses, syrup, or honey to the shallots and stir. Cook for 3 minutes, then add the pork chops and cover. Simmer for 25 minutes and remove from heat. To serve, let the pork chops rest for 5 minutes and then slice thinly and spoon the sauce over the top.
