1/4 cup raw Thai sticky rice
Special equipment: a mortar and pestle or an electric coffee/spice grinder

Directions

  1. Toast rice in a dry small heavy skillet over moderate heat, shaking skillet, until golden, 5 to 7 minutes (skillet will smoke), then cool. Grind to a powder with mortar and pestle.
